Articles, Categories and Sections can be a bit cumbersome, and figuring out how to have only one column of content showing at one time difficult. Here are the basic steps for getting one article to show at a time.
First add a new section and category for your particular articles. For example I added A new Section and Category using the same name for each (Video/Video, and How To/How To).
When you are in the Category you need to remember to pick the Section as well.
Joomla will autofill the alias for you.
 In the Menu Manager you can add the subheading. Adding a new menu item
as a subheading to my Articles Menu item. Select New then in the Menu type selection:
Articles>>Category Blog. 
Once in the window select on right the category section: Video/Video or How To/How To.
Make sure that you've selected the heading you want the sub-selection to appear under. In this case "Articles."
Make sure that the display is set up so that it only shows one article at a time. Google will penalize you if you have any content appearing more than once on your website.

So, now you'll only have one article at a time in your articles section and links to the rest, and a subsection in your menu to the new categories and section.
